"I've always added the rice during the initial sauteeing / "sofrito" phase.. not after so thats interesting. Also for the "round" rice (Arborio?) I adjust the level of water/stock used - say 2-1 instead of 3-1.Removing liquid might possibly be committing a heresy. 😊"
