"I used to work with a Nabisco bakery.  What you're seeing in that last picture is the scrap dough around the fishes being taken off - it normally gets fed back into the dough laminator (the machine that produces the overlapping sheets of dough) - crackers are flaky because they're made of layers of dough rolled together. "
